A sought-after product of the Norcina tradition of central Italy, it’s produced leaving the skin attached to the pig’s dorsal fat. The long seasoning, combined with spices and the aromas that the fat is free to absorb, give it an excellent taste and an inimitable melt-in-the-mouth finish.
